Hi
I've got a Mk I 961 Cafe Racer with standard pipes. I would like something that will i) Give me a bit more acceleration and ii) Give a louder engine noise to help drown out the rattling at tick over.
Has any one any thouhts /recommendations, please?

Loud pipes
Each to their own, but do you wear ear plugs? Much cheaper and more socially acceptable than loud pipes. Me? I like my neighbours.
Add in that legally any post 1986 silencers should be "e" marked as well, not that seem to bother anyone with a Hardley or a generic 125 around where I live.
Just saying, but what I've said will probably fall on (truly!) deaf ears for most Norton owners.

Changed the standard…
Changed the standard silencers on my 2012 961 Sport to the lookalike ones offered by Norton back in 2014. Unstrangled the engine giving improved performance and more pleasing sound , although not unduly loud - quieter than the short replacement two-into-one decat silencer also on offer from Norton back then. Back then cost £500 odd for the pair. You'd have to check if still available from the new company.

Thanks for replying. Three useful answers. I do have 1 1/2 feet in George's camp regarding really loud pipes but I do find it frustrating ( and slightly embarrassing) that when I start my bike all I can hear is rattling. I think may be James's suggestion is the way to go.

I was lucky enough to buy a set of megaphones on eBay with all the fittings. These are extremely rare, as most owners keep both sets when they change. They are also exceptionally loud. Zard do a replacement two into one pipe and I also looked at having one made specifically for my bike but the price was over £2500 which I thought was a rip off. The new factory may supply both the short pipes and megaphones. Have you tried them?
