The only reason I can see…
The only reason I can see to change to negative earth would be to use LED tail light. The Zener diode is not to be used if you change to negative earth, although I think Lucas did make a negative earth one for use on some late model Triumphs. The rectifier will fry in short order if you connect the battery negative earth, you would have to fit a replacement for that too I would suggest leaving positive earth on the bike, it works well.

Yes you can change it to negative earth. First you must check that all elements in the electrical circuit can handle reversed polarity. Lamps and horn won't mind. Rectifiers may or may not tolerate reversed polarity. You must check against your handbook, manufacturer's recommendations, etc., etc.. Same if electronic ignition is fitted. When all this is in place you can swap the battery leads. Depending on your level of skills / experience this operation very much doable in the "shed".
