Just bought 1956 ES2 for restoration - where can I get a restoration manual

No single book that I've found. Sorry about the pun! If your bike is together then photograph everything, that will be your best guide. I have Roy bacons book and the Norton manual, but it leaves big gaps, all part of the fun though! Particularly as there were so many changes year by year.

There is/was a great general bike restoration book out by RADCO. (The Vintage Motorcyclists Workshop). Great investment for the novice, full of good information. Google it. There was a old bike clubin South Walesthat had the full readable on line version on their web site. Can't find it now.

Mike Pemberton of Performance made a superb DVD which is available through the club that covers the stripping and rebuild of the pushrod single.

I have found it a very good investment!

The factory maintenance manual and parts list are also great resources - available widely in reprinted form.
