I was always warned off getting wheel rims re-chromed because the polishing process can weaken the dimples where the nipples locate and can pull through causing a complete wheel to collapse. I would go for stainless replacements myself or alloy if I was you.

I have had excellent results with re-chroming old Dunlop rims. I guess it all comes down to the person doing the job. The only way you can tell that mine have been re-chromed, apart from the age factor, is the stamping "DUNLOP" where a couple of letters show up slightly weaker than in a perfect stamping. But then again that could easily stem from the original manufacturing process. When it comes to expense, it is not very economical to re-chrome. I could have bought new rims considerably cheaper. But who knows the quality of these?

At the Norton Day a few years ago in Shropshire, one of the Stafford members rolled up to the Ponderosa Cafe on the rideout and his rear tyre blew out. On closer inspection, well not that close actually, the rim had split about 4 inches (100mm for anybody reading this under 25) where it had been polished prior to chroming. He was lucky to have only been doing about 5 MPH at the time. Where those rims were formed, the steel is not very thick at all. If you are going to ride it and not have it in your living room, get new rims.
