Can I use a 180w single phase stator instead of an 130w and do I need to change the rotor on my 1972 Commando Roadster? Cheers

Yes, but make sure your voltage regulation is capable of handling the higher power output when the lights are not being used.

A change of rotor is not necessary but I changed the 42 year old one on my Commando recently and saw a considerable increase in output from the alternator.

I know it's only one piece of data from one bike but with the headlight on (dipped beam), side lights and ignition, my 180W setup now breaks even on charging at about 3200rpm.

Up the capacity of your voltage regulator or keep the lights on all the time. I have stopped up rating alternators and have gone LED on all the bulbs instead, so dropping the power requirement.
